It's easy:<br /><br />I buy the cut up cubes of butternut squash because I am lazy. I toss them and some sliced onions with some olive oil and roast in the oven in a covered corningware til they are soft, and maybe slightly browned. Stir them a few times and test them periodically for softness. <br /><br />Alternatively, you can roast the cubes on cookie sheets, OR<br /><br />Buy a whole squash, slice it longways in half, scoop out the seeds, oil the cut halves and bake til the flesh is tender enough to scoop out.<br /><br />Next, I put some olive oil in my soup pot and dice up a good hunk of peeled ginger root. I love the taste of ginger, and it is good for inflammation. I saute the ginger a bit, dump in my squash and onions, and a box of chicken broth. Bring to a boil, simmer for a while to blend the flavors and then I use a stick blender to puree it, or you could put it in a blender, or I guess you could even use a potato masher and whisk to blend it all together. <br /><br />It's not as sweet as the prepared versions of squash soup, because there is no added sugar. But the ginger gives it some heat, so it's perfect for a winter lunch.
